I've waited a long time to come to Italy and take cooking classes. Well, no disappointments here. It is everything I could have hoped for and more! Learning a lot. Today, our first lesson at the Castle, we made Kale and Cannellini crostata, Veal Saltimbocca , Chard veges, Pumpkin Risotto, and Apple Crostata. They make their own olive oil and wine. The Brunello was one of the best I,ve ever tasted. The name is Carlo Baccheschi Berti. Wow! It is sold in the states but easier to find in New York. I will have to have some sent home.
